                                        FIRST COURSE 
                                        · Chef Monette presents a first 
                                        course of lobster soup. Fresh lobsters 
                                        are roasted then simmered to bring out 
                                        the full flavor. Asian influences of lime 
                                        leaf, lemon grass and coconut milk accent 
                                        the lobster providing a full-flavored 
                                        appetizer. Ready to heat and serve. 
                                      MAIN 
                                        COURSE 
                                        · The main course is a trifecta 
                                        of tender Colorado lamb: (1) Full Rack 
                                        of Lamb that has been crusted with Dijon 
                                        mustard and rosemary bread crumbs--ready 
                                        for roasting, (2) Lamb Loin that is fully 
                                        trimmed, marinated in extra virgin olive 
                                        oil, fresh rosemary and garlic--ready 
                                        to cook, and (3) a fully prepared lamb 
                                        shank, seasoned and cooked to perfection 
                                        in the Flagstaff House kitchen. Just heat 
                                        and serve.

                                        Chef Mark Monette 
                                        Chef Monette's culinary experience includes 
                                        creating dishes for several Four Star 
                                        restaurants in New York City and various 
                                        Michelin Three Star restaurants in France 
                                        and the Orient, where he trained with 
                                        several master chefs, including Bernard 
                                        Hermman and Thomas Keller. 
                                        
                                        Chef Monette became Executive Chef and 
                                        Partner of the Flagstaff House in 1985
